My son for some reason has decided not to eat any lentils, pulses or beans, and being vegetarian makes it difficult to prepare a wholesome meal. therefore i have been experimenting with a lot of rice dishes and i have created some very nice variations, incorporating basmati rice, health rice with lots of vegetabls and nuts.

  • Now add the tomatoes stir for a minute, then add the carrots, peas and corn-allow to cook for a 2-3 minute before adding the nuts and seeds mix
  • Continue cooking and stirring for a further 2-3 minutes, once all of the above have been thoroughly mixed add the sugar, lemon juice, salt and pepper
  • Now add in the rice and once again mix thoroughly, ensuring that the rice and vegetables are thoroughly and evenly mixed
  • Serve with a green salad
