The famous quote “Necessity is the mother of all inventions”, and for me “Necessity” has been the backbone behind most of my creations as well. My sons have embarked on the “high protein, high fat, low or no carb diet”.

For me it has been virtually impossible to create dishes that are absolutely “carb free”, as all lentils, chickpeas, beans, legumes and etc. have carbs in them-nonetheless I continue trying, and hence this invention of this salad-one fine Sunday I went into the kitchen to prepare lunch and I was told “please surprise me with something really good – not the usual run of the mill stuff with Indian spices – make it interesting – use some imagination” and this is where I thought I need to pack it with tons of flavour –  and yes no Indian spices or herbs – what then do I use – I had to rummage through my pantry – put on my “necessity of creation cap” and Voila – this is my creation:-

 

Chick Pea Salad 7

 Chick Pea & Baby Leaf Salad (Serves 4)

1 can chick peas (drained & washed)

100ml of fresh corn of the cob

35ml pitted & olives

50ml chopped red piquant peppers

25ml caper berries

65ml sliced fresh gherkins

100ml chopped iceberg lettuce

45ml finely chopped pecan nuts

Dressing (optional)

25ml chopped caper berries

50ml chopped pickled peppers

25ml pitted & chopped olives

50ml chopped red onion

5ml honey

100ml olive oil

50ml pickling liquid (from caper berries, peppers & olives)

To Serve

250ml baby spinach

250ml baby rocket leaves

50ml pecan nuts

Chick Pea Salad 3

Method

  • Mix all of the salad ingredients in a salad bowl and allow the salad to rest for about 20-30 minutes
  • Place all the ingredients for the dressing in a mixing bowl and using a hand held blender – blend till well combined
  • Place spinach and rocket on a serving platter and sprinkle the pecan nuts over them
  • Topple the salad into a bowl and place on the serving platter with spinach and rocket
  • Just before serving – drizzle the dressing over the salad and over the leaves

NB

 When I served this dish – I preferred it with the dressing – however my son had it without the dressing as he felt it a bit to strong – “too much going on” he said
